Where oh where has our good weather gone? We have had such a wet Spring so far...rain every weekend. Today was no different. In fact the wind and the hail took it to a new level!
I have been cooking fun new recipes for Henrik. I have such a beautiful kitchen, I can't help but be inspired to cook. I have finally satisfied my craving for Thai food and am now drawn to fun spices like Saffron and Tamarind. Who would have thunk it!! I love watching the Food Network and am finally brave enough to take items from my pantry and make things up. Henrik is so easy to please...he will eat anything I cook and he will tell me it is delicious. I'm not so sure he is is an objective judge!
I hope there is no rain tomorrow...I want to go for a short hike and then I have to come home and do my weekend cleaning.
I haven't seen Stella and her parents since last weekend! I miss them!

I love Friday's!
Well the good news for the day is that it is Friday! I also heard from Henrik that he MIGHT be here next Wednesday, but I have t wait until Monday to find out for sure. I want to let myself be excited but then if he doesnt make it I'll be so disappointed. He will only be here for 3 weeks this time, but I'll take what I can get.
I'm trying to decide if a long weekend in Maine will work out. The week I wanted to go, my good friend Kathy will be in France...I was hoping to stay with her so I don't know whether to try to stay with Patrick or so find another date. I also really want to spend time in Denmark with Henrik again. I love visiting him there.
My job is barely hanging on right now so with those uncertainties, I can't even begin to plan a vacation. It's so depressing. I need something to hang onto and to plan for.
The weather should be good this weekend so I can get some work done outside. I hope we have a weekend without rain for a change.

Cooking Thai
I have had so much fun expanding both my eating and cooking horizons! I have been cooking all kinds of noodles and veggie combinations. Sunday Tawni, Jason, and Stella came over for their first experience with Pad Thai. Stella loved the noodles as did Tawni. Jason said he liked it and then when he learned there was fish sauce added all he said he could taste was fish. He's such a pain in my *ss sometimes! HaHa
